Ingredients:
– 1 whole chicken, cleaned and cut into pieces
– 2 cups basmati rice
– 2 onions, finely chopped
– 4 cloves garlic, minced
– 2 tomatoes, chopped

– 2 tablespoons Mandi spice mix (available in Middle Eastern grocery stores or homemade*)
– 1 teaspoon turmeric powder
– 1 teaspoon ground black pepper
– 1 teaspoon ground cinnamon
– 1 teaspoon ground cardamom
– 1 teaspoon ground cloves
– Salt to taste
– 4 cups chicken broth
– 2 tablespoons ghee (clarified butter)
– Handful of raisins and almonds for garnish (optional)
– Fresh coriander leaves for garnish
Instructions:
Marinate the chicken pieces with yogurt, Mandi spice mix, turmeric powder, black pepper, cinnamon, cardamom, cloves, and salt. Let it marinate for at least 1 hour in the refrigerator.
In a large pot, heat ghee over medium heat. Add chopped onions and garlic. Sauté until they turn golden brown.
Add chopped tomatoes and cook until they are soft and mushy.
Place the marinated chicken pieces into the pot. Cook for about 5-7 minutes until the chicken is slightly browned.
Add the chicken broth to the pot. Bring it to a boil, then reduce the heat to low. Cover and simmer for about 30-40 minutes until the chicken is tender and cooked through.
Meanwhile, wash the basmati rice until the water runs clear. Drain the rice and set it aside.
Once the chicken is cooked, remove it from the pot and set it aside. Strain the chicken broth and reserve it for cooking the rice.
In a separate pot, heat some ghee over medium heat. Add the drained rice and sauté for a few minutes until it is lightly toasted.
Pour the reserved chicken broth over the rice. Season with salt to taste. Bring it to a boil, then reduce the heat to low. Cover and cook for about 15-20 minutes until the rice is fluffy and cooked through.
To serve, arrange the cooked rice on a serving platter. Place the chicken pieces on top of the rice. Garnish with raisins, almonds, and fresh coriander leaves for an extra flavor boost.
