At home, we need a restaurant-like taste, and outside of the home, we expect home-like care and love. To be honest, we serve you this two-in-one package at Gracefully Fed. Whose owner was given some dietary restrictions after being diagnosed with autonomic nervous system-affecting syndrome?
This is how she invented new recipes with No dairy-No gluten-No sugar. It was very unpleasant in the beginning to get used to food without these taste enhancers. But, after a while, she dug out some really good recipes that worked very well. After doing some soul-searching for her recipes, some wonderful ideas sparked in her mind, and with the help of some skilled workers, she made them work.
Her main goal with her café is to provide not only delicious but also healthy food. “A healthy place is a place of healing,” is what we believe. We made it possible by providing you with everything organic, dairy-free, and gluten-free.
Cuban Black Bean Soup
We have a rich variety of soups available in our cafe. Every meal we cook with homemade love and care is delicious, but our Cuban black bean soup is an appetizing meal with tons of health benefits. The ingredients we use in it are:
- Organic black beans
- Organic green pepper
- Organic red pepper
- Organic garlic
- Organic olive oil
- Organic apple cider vinegar
- Organic oregano
- Organic salt
- Organic cumin
- Organic black pepper
- Organic bay leaves
Soak the beans overnight before cooking the soup. Drain the beans the next morning, and add enough cold water to cover the beans by an inch. Add red pepper, garlic, black pepper, olive oil, and salt. Stir to combine and bring it to a boil over high heat.
Skim off any white foam, reduce the heat, and cook over low heat with a lid. Simmer it for 4-5 hours on low flame, until the soup becomes creamy, not watery. Check intermittently after every hour to confirm if there is enough water in the beans. If not, then add a cup of water and let it cook. The final consistency should be velvety and thick.
When the soup is almost done, stir in the vinegar and simmer uncovered for 15 more minutes. Add oregano, bay leaves, and cumin at the end before serving.
Black beans are rich in antioxidants, protein, fiber, vitamins, minerals, and carbohydrates. Unlike many other high carbs diets, black beans don’t cause a surge in blood sugar; in fact, the opposite is true. For diabetics, adding beans to their diet can improve blood sugar control.
