How to Make Water Kefir:

Water kefir is a sweet, mildly fizzy fermented drink that’s rich in probiotics.

1) Add ¼ cup of sugar or honey to 1 cup of water. Stir it until the sugar or honey dissolves.

2) Dissolve a packet of water kefir grains into your cup of sugar/honey water. Leave the grains to sit for 24-48 hours at room temperature. They will grow more each day, and you’ll notice them forming a white film on top of your jar (this is called “bloom”).

3) After 24-48 hours, strain out the grains with a strainer, cheesecloth, or nut milk bag into another jar (you can keep them in there for up to two weeks). Pour your new batch of sweetened water into your jar with the strained grains and cover loosely with a lid or towel. Let it sit at room temperature for 3 days before refrigerating (this is when it will start getting fizzy).
