  • A medium-rare T-bone (60-65°C) has a red to pink interior.
  • A medium T-bone (65-70°C) has pink insides.
  • A medium-well T-bone (70°C) has just a smidgeon of pink on the inside.
  • A well-done T-bone (75°C) contains no red or pink.

INGREDIENTS:

  • 2 Maleny Black Angus Beef T-bone steaks, 2.5cm thick steaks, about 500 grams each
  • 2 tablespoons of steak seasoning, 1 tablespoon per steak, (you can use any bbq rub or steak blend of your choice)
  • 1 tablespoon of olive oil
  • 1 tablespoon of butter, plan for about ½ tablespoon per steak
  • ½ tablespoon of parsley, chopped flat-leaf Italian variety (optional ingredient)
  • ⅛ teaspoon of black pepper, freshly cracked (optional ingredient)
  • ⅛ teaspoon of salt, or freshly cracked sea salt, etc. (these are optional ingredients)

INSTRUCTIONS:

    1. Remove the steak from the refrigerator while you prepare the other ingredients for the recipe (do this approximately 15 minutes before you plan to cook your T-bone steak). This will help bring the meat to room temperature.
    2. Preheat the oven to 200°C.
    3. After drying the T-bone steaks with a paper towel, season them all over with a steak rub or appropriate seasonings of your choice (don’t forget to rub the sides as well).
    4. Preheat a large cast-iron skillet over medium-high heat. Add the olive oil. After that, once the pan is nice and hot, place the T-bone steaks in it (the pan should smoke a little during the process).
