Take the boule dough out of the refrigerator and let it warm up to room temperature before placing it on the pizza dough. To prevent the dough from sticking, always cover the baking sheet with parchment paper or similar material.

The dough can still rise during this time, but it depends on the age of the dough – it can take up to 40 minutes. You can be sure, however, that the dough will continue to rise during baking.

When the dough is completely warm, dust the surface with flour. Tear or cut the dough with a knife. Tear off the amount of dough you want to bake. When you have reached the right amount, put it back in the refrigerator.

Take a handful of dough and shape it into the desired form. Different shapes are available, including balls, rectangles, and loaves. Be sure to flour your hands so the dough doesn’t stick to them. Don’t force it, just roll it into the desired shape.

Place the formed dough on a lined pizza mat. About 20 minutes before baking, preheat the oven to 450°F. Place an oven stone on the center rail. Sprinkle more flour on the dough and make a fence-like indentation with a serrated bread knife.

The dough is now ready to be baked. Slide the pizza dough onto a preheated baking stone. If you don’t have such a stone, you can also use a metal grill with an extended baking sheet, but it is highly recommended to use a baking sheet, especially if you have one.

Bake for about 30 minutes, until the crust is golden and firm to the touch. Transfer to a wire rack and let cool completely.
