Spicy Chicken and Sundried Tomato Pasta

Ingredients:

  • Gluten-free and Australian-made pasta (penne) x 1 packet
  • Extra virgin olive oil x 2 teaspoons
  • Onion (finely chopped) x 1
  • Chicken broth (salt reduced) x 2 cups
  • Basil leaves (fresh and lightly chopped) x ΒΌ cup
  • Coconut cream x 1/3 cup
  • Garlic (finely diced) x 2 to 3 cloves
  • Spicy chicken sausage x 340 grams
  • Sundried tomatoes (chopped) x 3 tablespoons

Method:

  • Grab a large pot, fill with salted water and then bring to a boil.
  • Add in and cook the penne pasta according to the instructions on the packet until the pasta is just about cooked (al dente).
  • Drain and rinse the pasta while saving some of the water. Then add the pasta back into the pot and stir in some of the cooking water. Then put aside.
  • Put a pan on medium heat with the oil and fry the sausage for around 6 minutes. Cut into chunks and put aside.
  • Heat a large saucepan on medium heat, add in some more oil and cook the onion, garlic and sundried tomatoes for 5 minutes.
  • Add the chicken broth and let simmer for 2 minutes.
  • Combine in a blender until smooth.
  • Pour the sauce back into the pan and whisk in coconut cream.
  • Once combined, add in the cooked pasta and stir for 2 minutes.
  • Add in the sausage and basil and cook for a further 3 minutes.

Puttanesca Pasta

  • Garlic (minced) x 4 cloves
  • Australian-made and gluten-free brown rice spaghetti x 1 packet
  • Crushed tomatoes x 1 can
  • Olives (green or Kalamata) x 2/3 cups
  • Parsley (fresh for garnish) x a few pinches
  • Red pepper flakes x 1 teaspoon
  • Extra virgin olive oil x 3 tablespoons
  • Anchovy paste (optional) x 2 tablespoons

Method:

  • Fill a pot with salted water and bring to a boil. Cook the pasta as per the instructions on the packet. Strain and rinse the pasta while keeping 1 cup of the cooking water.
  • Return the pasta back to the pot and coat the noodles with the cooking water.
  • Heat a large saucepan with oil and cook the garlic, anchovy paste and chilli flakes for 3 minutes.
  • Add in the can of crushed tomatoes and stir until mixed through. Simmer for 5 minutes and add the pasta and olives.
  • Cook for a further 2 minutes, and then serve with the parsley as garnish.
